If you run postwar and prewar, then why do you need DC? I happen to have some G gauge trains, and it would be nice to not have to invest in separate power supplies. The BridgeWerks transformer is primarily DC but has a 24 volt AC output. That's too much voltage for prewar and postwar trains, and there isn't a good throttle/controller available to handle and cap that much AC voltage. George

In your second photo, I can clearly read "AC/DC Commander" on the green bottom board. This is an ERR product but it does not have cruise. You would need to replace the AC/DC Commander with a Cruise Commander to get constant speed cruise control.

Wiring the motors in series is a good move no matter what. Honestly your best and only option to achieve any type of independent control would be to install an ERR AC/DC commander. (I wouldn't spend extra money for the Cruise Commander because in my experience, the inexpensive can motors in those Alcos are prone to cogging , and don't respond well to any form of speed control.)
